500 g very fresh anchovies, cleaned and opened like a book 150 ml lemon juice (about 3 lemons) 80 ml orange juice (about 1 large orange) 80 ml white wine vinegar 4 tablespoons extra virgin olive oil 1 clove garlic Chopped fresh parsley Salt and pepper Optional: zest from one unwaxed lemon and orangeAnchovies marinated in citrus fruits
Preparation
Arrange the thoroughly cleaned anchovies in a shallow container, either in a single layer or in layers separated by a drizzle of juice. Pour in lemon juice, orange juice, and vinegar until completely covered. Cover and marinate in the refrigerator for about 2 hours, until the anchovies are pale and cooked through. Drain the anchovies gently, pat them dry with paper towels, and arrange them on a serving platter. Season with extra virgin olive oil, finely chopped garlic (or crushed and removed after a few minutes), salt, pepper, and chopped parsley. Finish with a little grated citrus zest and serve cold, with toasted bread or crostini.
